The Perfect Kale Salad for “Beginners”

Kale Salad for Beginners RecipeKale is one of those foods that we all know is incredibly healthy, but that most are afraid to try.

Chances are you have tried kale in the past, you may have found it to be stiff, flavorless, and unpleasant. Although kale in its raw, undressed state CAN be all of those things… with the right preparation and the right dressing, kale can be very delicious and satisfying.

The key to a good kale salad is acid, you need this to help break down the kale and make it softer and more palatable. My go-to is either apple cider vinegar, white wine vinegar, and/or lemon juice.

In this recipe, we mix sweet apple cider vinegar with shredded apples, tart cranberries, and crunchy almonds. Give this easy kale salad a try and I promise you too will learn to love kale!

Kale and Apple Slaw

Serves 2

Ingredients:

  • 2 cups chopped kale
  • 1/2 green apple, shredded with a cheese grater or in a food processor
  • 1/4 cup slivered almonds
  • 2 tablespoons unsweetened dried cranberries
For Dressing:
  • 2 tablespoons mayo with olive oil
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • dash of salt and pepper

Instructions:

First, prepare the kale. Cut out the stems. Chop kale into small 1/2 inch pieces, and put into a bowl.  Massage the kale for about 30 seconds. (Yes…massage the kale with your hands! This helps to soften the kale.)
Add all dressing ingredients to a large salad bowl and whisk well. Pour over kale and toss well to ensure each piece is coated with the dressing. Add all remaining ingredients, toss, and serve. Enjoy!

Note: The best part about kale salad is that the longer it sits, the better it gets!  Unlike traditional salad that gets soggy after you dress it, you can make this salad the night or morning before and enjoy it for lunch or dinner without having to worry about it getting soggy.
